Speckled Easter Coconut Cake

To finish off my cookie-crazed Saturday with a bang, I made a gosh dang cake! My aunt’s birthday is near Easter and she had requested a coconut cake. I had seen this one online before when looking at Easter recipes and decided to give it a try! I thought it was okay. It looked beautiful but it was a bit too sweet for my taste. Even leaving a whole cup and a half of sugar out of the buttercream, I still thought it was a bit much. It certainly felt like a lot of frosting even though the frosting-to-cake ration seemed pretty reasonable.

I did have a fun time doing the speckling of the cake. I had a little paintbrush and, if you are wondering: Yes, I did accidentally speckle the whole kitchen while I was at it. I’m still chipping food coloring off my computer keyboard. The phyllo nest was also super fun. On Mom’s good advice, I made the cake a day ahead and added the nest just before serving. It added a nice crunch to break up the sweetness and softness of the cake. And, of course, looks really cute 🙂
