Today I made my first-ever pie using my mom’s recipe! She’s the queen of pie-crust perfection and I’m delighted that my first attempt turned out so wonderfully. She laid out instructions in a step-by-step on Facebook for me with pictures the whole way. So, I went in confidently and wasn’t disappointed! I made the crust on Friday and rolled it out and filled it on Saturday. The end product did have a slightly ‘soggy bottom’ so I don’t think I’d have won any Great British Baking Show prizes but it didn’t last a full three days in my two-person household even so. And, I think draining the apples a little better next time will take care of that trouble. I’m damn proud of this pie and am definitely excited to try and make another one. Strawberry-rhubarb perhaps?
